A cup of cooked rice contains about 200 calories and 46g of carbs while a cup of cauliflower has 25 calories and only 5g of carbs!

To prepare cauliflower rice: wash and trim a head of cauliflower. Place florets in a food processor and pulse to desired consistency (or grate the cauliflower by hand if you do not have a food processor). Place the cauliflower rice in a microwavable bowl and cook for 3-5 minutes. Fluff with a fork and enjoy!
